Sarajevski Ćevapi (Sarajevo-Style Beef Ćevapi)

The Sarajevo take on ćevapi: skinless little sausages made purely from beef — no lamb — so the clean, savory meat flavor leads. Ground twice and rested for a bouncy bite, char-grilled, then tucked into pillowy somun that soaks up the meat juices and served with rich kajmak and plenty of raw chopped onion. Preparation time includes at least 2 hours of refrigeration.
